Main Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts, cut into bite-size pieces
  • 3 cups cooked white rice
  • 2 cups broccoli florets
  • 1 cup carrots, diced
  • 1 red bell pepper, chopped
  • 1/2 red onion, chopped
  • 1/2 cup frozen peas
  • 2 green onions, sliced
  • 1 tbsp sesame seeds optional

Teriyaki Sauce Ingredients

  • 1/2 cup low-sodium soy sauce
  • 1/3 cup honey or brown sugar
  • 1/4 cup water
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tbsp cornstarch
  • 2 tbsp water for cornstarch slurry

Instructions
 

Preheat and Prepare

  • Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

Make the Homemade Teriyaki Sauce

  • In a small saucepan, combine soy sauce, honey (or brown sugar), 1/4 cup water, rice vinegar, sesame oil, minced garlic, and grated ginger. Bring to a gentle simmer over medium heat for 2–3 minutes.
  • In a small bowl, mix cornstarch with 2 tbsp water until smooth, then stir into the sauce. Cook for 1–2 minutes until thickened.

Cook the Chicken

  • Heat a large skillet over medium heat. Add the chicken pieces and cook for 6–8 minutes until lightly browned and cooked through.

Sauté the Vegetables

  • Add broccoli, carrots, red bell pepper, red onion, and frozen peas to the skillet. Cook for 4–5 minutes until the vegetables are slightly tender.

Combine with Rice and Sauce

  • Stir in the cooked rice and half of the teriyaki sauce until everything is evenly coated.

Assemble and Bake

  • Transfer the mixture to the prepared baking dish, spreading it into an even layer. Drizzle the remaining teriyaki sauce on top.

Bake and Garnish

  • Bake uncovered for 15–20 minutes until hot and bubbling. Sprinkle with sliced green onions and sesame seeds before serving.
