Preheat the oven to 180°C (350°F). Grease and line three 8-inch round cake pans.
In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
Add the eggs, oil, milk, and vanilla extract. Mix until smooth.
Gradually pour in the hot coffee or hot water and stir until a silky batter forms.
Divide the batter evenly among the prepared pans.
Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.
Cool the cakes in the pans for 10 minutes, then transfer to wire racks to cool completely.
For the mousse filling, heat 1 cup of heavy cream until steaming.
Pour it over the chopped chocolate and let stand for 2 minutes.
Stir until smooth and allow to cool to room temperature.
Whip the remaining 1 cup heavy cream with cocoa powder and vanilla until soft peaks form.
Fold the whipped cream into the cooled chocolate mixture until light and fluffy.
Refrigerate for 20 minutes to slightly firm.
For the frosting, beat the butter until creamy.
Add powdered sugar and cocoa powder gradually, mixing well.
Add the cream and vanilla extract and beat until smooth and fluffy.
Place one cake layer on a serving plate.
Spread half of the chocolate mousse filling evenly over the layer.
Add the second cake layer and spread the remaining mousse filling.
Top with the final cake layer.
Frost the top and sides of the cake with the chocolate frosting.
Press chocolate sprinkles around the sides of the cake.
Pipe decorative swirls of frosting on top and garnish with chocolate curls.
Refrigerate for at least 1 hour before slicing to allow the layers to set beautifully.
