Ingredients
  

For the cake

  • 1 1/2 cups all-purpose flour
  • 3/4 cup cocoa powder unsweetened
  • 1 1/2 cups sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs room temperature
  • 3/4 cup milk room temperature
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 3/4 cup hot coffee

For the chocolate ganache

  • 200 g chocolate at least 50 percent cocoa solids
  • 200 ml heavy cream
  • 1 tablespoon butter

Instructions
 

  • Preheat your oven to 175 degrees Celsius or 350 degrees Fahrenheit. Grease a round cake pan well and line the bottom with parchment paper.
  • In a large mixing bowl, combine the flour, cocoa powder, sugar, baking powder, baking soda, and salt. Whisk until no lumps of cocoa remain.
  • Add the eggs, milk, vegetable oil, and vanilla extract to the dry mixture. Mix until the batter is smooth and glossy. Avoid overmixing once the flour is hydrated.
  • Slowly pour in the hot coffee while stirring gently. The batter will be thin, which is exactly what you want for a moist crumb.
  • Pour the batter into your prepared pan. Tap the pan lightly on the counter to release air bubbles.
  • Bake for 30 to 35 minutes. A toothpick inserted into the center should come out with a few moist crumbs attached.
  • Let the cake cool in the pan for 10 minutes, then invert it onto a wire rack. Cool completely before slicing into layers.
  • To make the ganache, heat the heavy cream in a small saucepan until it just begins to steam. Do not let it boil.
  • Pour the hot cream over the chopped chocolate in a heatproof bowl. Let it sit for two minutes, then add the butter and stir gently until smooth and glossy.
  • Slice the cooled cake horizontally into two even layers. Spread a generous amount of ganache over the bottom layer, then place the top layer over it.
  • Cover the entire cake with the remaining ganache, smoothing it with a spatula. Chill until the ganache is set.
  • Before serving, drizzle slices with extra warm melted chocolate for an irresistible finishing touch.

Notes

A helpful trick is to chill the cake for 20 minutes before adding the final coat of ganache. This prevents crumbs from mixing into the glaze.
