Ingredients
  

  • 3/4 cup unsalted butter 12 Tbsp; 170g
  • 2 Tablespoons vegetable oil
  • 4 ounces bittersweet or semi-sweet chocolate 113g, coarsely chopped
  • 1 and 1/2 cups granulated sugar 300g
  • 3 large eggs at room temperature
  • 2 teaspoons pure vanilla extract
  • 1/2 cup unsweetened natural or Dutch-process cocoa powder 42g
  • 1 cup all-purpose flour 125g, spooned & leveled
  • 1/2 teaspoon salt
  • 1 cup + 2 Tablespoons semi-sweet chocolate chips about 200g, divided
  • Optional for serving ice cream, salted caramel sauce, and/or hot fudge sauce

Instructions
 

  • In a medium saucepan over medium heat, stir butter, oil, chopped chocolate, and sugar until melted and smooth (about 5 minutes). Alternatively, microwave in 20-second intervals, stirring each time. Pour into a large bowl and whisk until smooth. Let cool for 5 minutes.
  • Preheat oven to 350°F (177°C). Lightly grease a 10-inch cast iron skillet.
  • Whisk eggs and vanilla into the chocolate mixture until fully incorporated.
  • Stir in cocoa powder, flour, and salt. Fold in 1 cup chocolate chips.
  • Pour batter into the skillet and sprinkle remaining chocolate chips on top. Bake for 30–36 minutes, until a toothpick inserted comes out with a few moist crumbs.
  • Let cool for 5 minutes before slicing. Top with ice cream or drizzle with caramel for extra decadence.

Notes

For the best flavor, use high-quality baking chocolate like Ghirardelli or Baker’s brand. Avoid chocolate chips for melting. Dutch-process cocoa powder enhances richness, but natural cocoa works too. Room temperature eggs blend more smoothly into the batter for a uniform texture.
