Ingredients
  

Chocolate Cake

  • 3 cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • cups granulated sugar
  • 3 large eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup hot coffee
  • ½ cup vegetable oil

Whipped Caramel Cream

  • 2 cups cold heavy whipping cream
  • ½ cup caramel sauce chilled
  • 2 tablespoons powdered sugar

Caramel Filling

  • cup caramel sauce

70% Dark Couverture Chocolate Ganache

  • 200 g 70% dark couverture chocolate finely chopped
  • 200 ml heavy cream

Optional Substitutions

  • Swap buttermilk for 1 cup milk mixed with 1 tablespoon lemon juice or vinegar.
  • Use store-bought caramel sauce or make your own with sugar, butter, and cream.
  • For a gluten-free version, substitute all-purpose flour with a gluten-free blend.

Instructions
 

  • Preheat the oven to 350°F (180°C). Grease three 8-inch (20 cm) round cake pans and line the bottoms with parchment paper.
  • In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, kosher salt, and granulated sugar.
  • Add the eggs, buttermilk, vegetable oil, and vanilla extract. Mix until the ingredients are almost fully combined.
  • Gradually add the hot coffee and mix until the batter is smooth and lump-free.
  • Divide the batter evenly among the three prepared cake pans.
  • Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove the cakes from the oven and allow them to cool completely before assembling.

Assembling the Whipped Caramel Moist Chocolate Cake

  • For the whipped caramel cream, place the cold heavy whipping cream and powdered sugar in a chilled mixing bowl. Whip on medium-high speed until soft peaks form.
  • Slowly add the chilled caramel sauce while continuing to whip. Continue whipping until the cream is thick, fluffy, and stable enough for layering. Keep refrigerated.
  • Place the first chocolate cake layer on a serving plate.
  • Spread or pipe a layer of whipped caramel cream over the cake, leaving a small border around the edge.
  • Spread about ⅓ of the caramel filling over the cream.
  • Place the second chocolate cake layer on top and repeat with whipped caramel cream and another ⅓ of the caramel filling.
  • Place the third chocolate cake layer on top and cover the top and sides with the remaining whipped caramel cream.

Preparing the Ganache

  • For the ganache, place the chopped 70% dark couverture chocolate in a heatproof bowl.
  • Heat the heavy cream until hot and steaming but not boiling.
  • Pour the hot cream over the chocolate and let it stand for 2–3 minutes.
  • Stir slowly from the center outward until the chocolate is completely melted and the ganache is smooth and glossy.
  • Allow the ganache to cool slightly until it is thick enough to pour but still flows easily.
  • Pour the ganache over the top of the cake and let it naturally drip down the sides.
  • Refrigerate the assembled cake until the whipped caramel cream and ganache are set.
  • Slice and serve chilled.

Notes

For a lighter version of this Whipped Caramel Moist Chocolate Cake:
- Replace all-purpose flour with almond flour or oat flour for a low-carb option.
- Use coconut sugar instead of granulated sugar.
- Substitute heavy cream with coconut cream for a dairy-free caramel whipped cream.
