Ingredients
  

  • 2 cans plain beans (navy, cannellini, or great northern) drained and rinsed
  • 6-8 slices pepper bacon chopped
  • 1 link andouille sausage sliced or cut into chunks
  • 1 large onion chopped
  • 1 bell pepper (any color) chopped
  • 2-3 cloves garlic minced
  • ½ cup ketchup
  • ¼ - ½ cup packed light brown sugar adjust to taste
  • 1-2 tbsp molasses
  • 1-2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp Worcester sauce
  • ¼ - ½ cup whiskey adjust to taste
  • ½ cup chicken or beef broth or water
  • 1 tsp smoked paprika
  • ½ tsp chili powder
  • Salt and freshly ground black pepper to taste

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Cook the bacon in a large skillet over medium heat until crispy. Remove the bacon with a slotted spoon, reserving 2-3 tablespoons of drippings.
  • Sauté the onion and bell pepper in the bacon drippings until softened, about 5-7 minutes. Add garlic, smoked paprika, and chili powder, cooking for 1 minute more.
  • While the vegetables cook, pan-fry or grill the andouille sausage until browned. Set aside.
  • In a large bowl, combine the beans, crispy bacon, cooked onion and bell pepper mixture, and sausage.
  • Stir in the ketchup, brown sugar, molasses, apple cider vinegar, Dijon mustard, Worcester sauce, whiskey, and broth until the mixture is well coated.
  • Pour into a 2-quart baking dish and bake uncovered for 60-75 minutes, until bubbly and thickened.
  • Let rest for a few minutes before serving warm.

Notes

For extra caramelization, broil the beans for the last 2-3 minutes of baking. Stir the mixture halfway through baking if the sauce reduces too quickly.
