Ingredients

For the Cake:

  • 1 ¾ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup buttermilk If you don’t have buttermilk, make a substitute by mixing 1 cup of milk with 1 tablespoon of lemon juice or vinegar. Let it sit for 5 minutes before using.
  • ½ cup vegetable oil
  • 2 large egg whites
  • 2 teaspoons vanilla extract
  • 1 cup crushed chocolate sandwich cookies (like Oreos)

For the Frosting:

  • 1 cup unsalted butter, softened
  • 4 to 5 cups powdered sugar If you prefer a less sweet frosting, reduce the powdered sugar to 3 cups.
  • 1 teaspoon vanilla extract
  • ¼ cup heavy cream
  • Additional crushed cookies for garnish

Instructions

Step-by-Step Instructions

  • Preheat your oven to 350°F (175°C). Grease two round cake pans and set aside.
  • In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • In a separate bowl, mix the buttermilk, vegetable oil, egg whites, and vanilla extract until smooth.
  • Gradually add the wet ingredients to the dry ingredients, stirring just until combined.
  • Gently fold in the crushed cookies, taking care not to overmix the batter.
  • Divide the batter evenly between the prepared cake pans.
  • Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  • While the cakes cool, prepare the frosting: beat the softened butter until creamy, then gradually add powdered sugar, followed by vanilla extract and heavy cream.
  • Once the cakes are fully cooled, frost the first layer, add the second, and cover the entire cake with frosting. Garnish with additional crushed cookies.

Notes

For a lighter version, consider reducing the sugar or using a low-fat frosting.
